Lunch: Salmon & Avocado Salsa with Cauliflower Rice
This quick and nutritious lunch is designed to taste good and make you feel good too. Our go-to salmon dish is packed full of Omega-3 for healthy hormones, and it balances the stress hormone cortisol, supports the activity of liver enzymes involved in detoxification, and increases fertility.
(Makes 2 servings)
Recipe
· 2 wild-caught salmon fillets
· 1 tbsp olive oil
· ½ tsp cumin
· ½ tsp paprika
· ½ tsp garlic powder
· ½ tsp onion powder
· ½ tsp black pepper
· Pinch sea salt
For the Avocado Salsa
· 0.5 avocado, sliced
· ½ tbsp cilantro, chopped
· ¼ red onion, sliced
· 1 lime, juiced
· Pinch of sea salt
For the Cauliflower Rice
· ½ head cauliflower, grated
· 1 tbsp olive oil
· ½ clove garlic, minced
· Optional – handful parsley, chopped
Method
1. Preheat oven to 400 degrees.
2. Place salmon in a greased 8-inch baking dish and coat with oil and spices. Bake for 12-15 minutes or until fish flakes easily with a fork.
3. Place the grated cauliflower and minced garlic in a pan with a splash of olive oil over medium heat. Gently sauté until soft, about 5-10 minutes. Add chopped parsley.
4. Mix avocado salsa together and set aside.
5. Top the cauliflower rice with salmon and avocado salsa, season with lemon as required.
