Raspberry Chia Pudding with Pistachio Crumble

OMEGA 3’S • VEGAN • DAIRY FREE • GLUTEN FREE

Ingredients

  • 1/4 cup chia seeds
  • 1 cup coconut water
  • 1 tsp stevia
  • 1/4 cup mixed berries, mashed
  • 2 tbsp pistachios, chopped

Instructions

  1. Mix chia seeds, mashed berries, stevia and coconut water together in a bowl or glass jar. Let it sit in the refrigerator overnight to transform into a luscious gel.
  2. Remove from the fridge and make sure your pudding looks thick. Top with extra berries and a sprinkle of pistachio crumble.
  3. Dig in and enjoy immediately!

Notes

If you are avoiding nuts, replace pistachios for pumpkin seeds.
