OMEGA 3’S • VEGAN • DAIRY FREE • GLUTEN FREE
- 1/4 cup chia seeds
- 1 cup coconut water
- 1 tsp stevia
- 1/4 cup mixed berries, mashed
- 2 tbsp pistachios, chopped
- Mix chia seeds, mashed berries, stevia and coconut water together in a bowl or glass jar. Let it sit in the refrigerator overnight to transform into a luscious gel.
- Remove from the fridge and make sure your pudding looks thick. Top with extra berries and a sprinkle of pistachio crumble.
- Dig in and enjoy immediately!
If you are avoiding nuts, replace pistachios for pumpkin seeds.
