Lemon Garlic Zoodles

Lemon Garlic Zoodles

Zucchini noodles, or zoodles, taste surprisingly similar to regular ones. They take the flavor of whatever toppings or sauces you put on them, leaving the possibilities endless! This recipe is packed with lemon and garlic and is a great light dinner for a summer night.

  • 4 medium zucchinis (use about one medium one per person)
  • 2 large cloves of garlic, minced
  • lemon juice of one lemon
  • 3 tablespoons olive oil
  • 2 tablespoons lemon infused olive oil (if you don’t have any, add a bit more olive oil and regular lemon juice)
  • 2 tsp salt
  • lemon zest, parsley, salt + pepper to taste and serve


  1. wash the zucchinis well and cut off both ends
  2. using a peeler, peel off thin layers of the zucchini all around, creating “noodles” (or use a spiralizer if you have one) and place in a large bowl
  3. cover the bottom of a deep pan with water and a pinch of salt and bring to a boil
  4. add the zoodles into the boiling water and cover with a lid, cooking for about 3-4 minutes to soften
  5. in the meantime, for the sauce, add minced garlic, olive oil, lemon, salt, lemon olive oil in a bowl and mix
  6. drain the zoodles once softened and top with lemon garlic sauce and lemon zest, salt, pepper, and parsley
