Deliciously Healthy Cupcake

There’s almost nothing better than a deliciously sweet cupcake for dessert. A light, fluffy cake with decadent icing is nirvana. And thanks to Amanda Sette (Twitter & Instagram), we now have a healthy cupcake recipe ready for your enjoyment! Main image courtesy of Amanda Sette.


    Cake Ingredients
  • 2/3 cup agave nectar
  • 1/4 cup egg whites
  • 1 tsp vanilla extract
  • 1 1/2 cups spelt flour
  • 1 3/4 tsp baking powder
  • 1/4 cup unsweetened coconut milk
  • 1 tsp natural honey
  • Vanilla Frosting Ingredients
  • 1 container vanilla, fat-free yogurt
  • 2 packets truvia/stevia
  • 1 tbs unsweetened coconut milk
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • Chocolate Frosting Ingredients
  • PB and Co's Dark Chocolate Dream


  1. Preheat oven to 350F.
  2. In a small bowl, mix the spelt flour and baking powder. In a medium bowl, mix the agave nectar, egg whites, vanilla extract, coconut milk, and natural honey.
  3. Add the dry ingredients form the small bowl into the wet ingredients bowl. Mix until thoroughly combined.
  4. Place paper linings in each cupcake tin, or spray with a nonstick spray. Pour 1/4 cup of batter into each cupcake.
  5. Bake for 12-15 minutes.
  6. Stick a toothpick in one healthy cupcake. If it comes out clean, they're done.
  7. Let completely cool before frosting!
  8. Sprinkles optional
